It seemed the sort of day to bring the sunshine in. I woke up this morning (for the second time after the cats had awoken me to let them in at 5am), to find the sun streaming through the window and a glorious blue sky.
Being we're in England though and things can change just like that, by the time we were trekking up to school the rain was descending. Still, one happy bike ride later, it felt like time to welcome the sunshine back. And this felt to be the easiest way to do it as, by now the rain lashed against the window. A sun dance would have been another option I guess... Anyway, to make the raw energy balls (which were actually the leftover from the cheesecake base): 1 cup dates, 1 cup almonds, 3/4 cup raisins, 1/3 cup mixed seeds (I used pumpkin, sesame, sunflower). Mix in food processor until starting to stick together. If too dry add more dates/raisins/tbsp tahini), and if too wet, more of the dry ingredients. Form into small balls. OR use as the cheesecake base and press into ramekins or pie dishes. The topping is simply: 1 cup cashews, 1 medium avocado, 1 banana, juice of 5 limes blended in the vitamix. Add the topping to the base and voilà- easy tasty cheesecake. I'm storing mine in the freezer until I'm ready to serve/give away - I made it specially for my mum who'd donated some extra limes my way...
