Sweet potato, chilli mixed veg with cauliflower and kale 'rice'
I'm celebrating my first year of raw foods today and thought I'd make something lovely for my Saturday night dinner! I had a fabulous lunch out with two brilliant girls yesterday in my new favourite restaurant - Global Tribe Cafe in Leeds (more about that in a bit), and a great day today with more wonderful people and a little lunch out too). Actually I'm feeling a little celebratorily spoiled really. Which is just lovely! I've learnt lots over my year and might share a few thoughts in another post but whilst I remembered this I thought would jot down the ingredients.
The cauliflower and kale rice was a new one for me tonight. I'll be doing it again. Not only a little more colour - it tasted great and got some extra greens into the bargain. For just me I used half a medium sized cauliflower and 3 stalks of kale (with the stems removed). Put in the food processor and blitz until rice (or cous cous) sized. If no processor then you can use a grater.
The sweet potato and chilli sauce:
1 medium sweet potato (chopped)
1 medjool date
3/4 cup oat milk
small handful of mixed cashews and flax seed
chilli to taste
1 tsp tandoori spice
Blended in the Vitamix until smooth - check the spice factor and if you want it with a little more kick then add a little more at a time.
Chopped veg is really up to you - I think it's great to leave the flexibility but in case you'd like some ideas I used butternut squash, red pepper, cherry tomatoes, spring onions and celery and layered them on top of the 'rice', putting the sauce on top and garnishing with some fresh coriander.

Just a word of two about Global Tribe Cafe as since I've told everyone who would stand still long enough about it I thought I'd best mention it here. Hoping you're standing still! Anyway I was pretty excited (which by the time I got there everyone knew) and it totally lived up to expectation. Well, no, I suppose it exceeded expectation. Imagine a place where everyone was happy, joy exuded out of them and nothing was too much hassle. Clean, well run, calm, small but not too small, friendly and just somewhere you could feel at peace. Then the food. For a year I've gone out and I don't think I've once ordred a food dish directly off the menu. I've taken to realising that eating out is not the taste experience that eating can be and that a few salad veg on top of a lettuce leaf or two is OK really, I've usually got a back up plan in my bag. That may be a little extreme but not too far off. Even my daughter tonight was telling me that I must ask for a salad about 4 times as big as they think I'd like so that I get a decent amount. Anyway that was before, in other restaurants. Here at the Global Tribe I had a choice. Of food off a real menu! And they all looked great. I went with the Teriyaki Noodles and wasn't disappointed. They were delicious. And, so helpful were they that although juice wasn't on the menu, Mario made me a carrot, ginger, apple and lemon juice.
I was so excited I had dessert too (a choice of two raw desserts) - a stunningly smooth chocolate fudge cheesecake. Oh my word. Non raw, non vegan people - everyone - you must try this. I would have had no idea. Divinely smooth, delciously chocolatey, it was a treat for all the senses. I will be back.
