Vegan Chocolate Chip Cookies
I'm not sure that I'm having so much luck with my vegan baking. I love raw food prep (and eating!), vegan cooking but baking and me aren't quite friends just yet. I'm trying. But probably not often enough with me not really eating it. So the birthday cake I made wasn't the best. But Oh. My. Word. The biscuits surpassed my expectations and I got so many compliments from Isla's classmates after she took those to hand out for her birthday at school. I tried a nibble and they were great. So give this one a whirl. I don't think anyone would guess it was vegan even.
Ingredients:
125g sugar (I used caster sugar but if hadn't got it in would have been unrefined granulated and a more crunchy version)
125g self raising flour
80ml light olive oil
1/2 teaspoon himalayan salt
1/2 teaspoon bicarbonate of soda
1/2 teaspoon vanilla (use a good quality extract)
One mini moos original organic bar (vegan chocolate) broken into small chunks
Preheat oven to 180C. Combine all ingredients in a food processor except for the chocolate. Blend until mixed well. Mixture will be slightly crumbly when ready but will press together and stay in shape. Using a lightly greased oven tray/greaseproof paper/bun cases pick out and press together small amounts of the mix to make bite size (or bigger if desired) cookies.
Pop into the oven and bake for aroun 15 minutes - until slightly golden on top. Remove and place on a baking rack to cool. If you can wait that long.
