Christmas pudding 'cheesecake'
Base: 3/4 cup pecans
2/3 cup cashews
1/2 cup dried, pitted dates
1/2 clementine
Processed together in the food processor.
Add 1/4 cup pumpkin seeds
1 med grated carrot.
Blend.
Add 1/8 cup cranberry
1/8 cup currant
Pulse to mix. Add to dishes. Dust with cinnamon powder.
Cheesecake topping is:
1 &1/2 cup cashews
1/2 cup coco milk
Juice of one lemon
1 tsp ginger
1/2 tsp cinnamon
Pinch rock salt
Vanilla seeds from 1 pod.
Blend.
Pour over base, decorate (mine are coconut sugar and cinnamon). Freeze to store.
