Raw Rolos
Make your raw chocolate - I usually make it as follows:
Melt 100g cacao butter add in 4 tbsp cacao powder, 2 tbsp lucuma and 2-4 tbsp maple syrup (depending how sweet you want it)
Pour raw chocolate into the bottom of the mould and let set for a few minutes in the fridge.
The date toffee is 2 cups dates and 3/4 cup water, blended well.
Layer on the date mixture and then top with chocolate. Ideally move the date toffee away from the edges and the choc will drip down so encasing it all. It's pretty easy to do - just use a small knife and gently slide around the edge of the mould. I always think I need more date mixture than I do so think smaller and you can always top it up.
Pop back in the fridge to set and enjoy!
