I do really, really like simple recipes, but this creation feels so simple it taps into that 'teaching your grandmother to suck eggs' category.
Anyway, since the world may not have discovered banana boats yet, here goes.
Step 1. Get a romaine lettuce, oh so sweet lettuce or baby gem lettuce and take some leaves off
Step 2. Thinly spread (or not so thinly - depending on preferences) some nut butter* along the leaf.
Step 3. Peel banana.
Step 4. Add banana to lettuce leaf.
Step 5. Eat.
You can shake it up by adding dates or sultanas to your 'boat', not having the nut butter or really however you like. As a basic, quick and tasty snack or meal it makes me smile every time. Enjoy!
** tahini will work find instead.
I make my own nut butters when I've available ingredients and time (and get a supply delivered from my mum too!). It's about as easy as making banana boats to be honest, and I don't understand why you buy them they are with palm oil, other oils, sugar, salt and all sorts added when it doesn't need them all in. I do sometimes add some salt but the rest I can happily leave.
I usually, but not always, roast the nuts for about 10 minutes then allow to cool. If peanuts with skins on or hazelnuts, you may wish to rub them a little to remove the skins (or painstakingly peel them - I prefer not that route, but they're your nuts now...). Then blend in the processor until desired consistency. It may need scraping down the sides a little but is worth the effort. Generally it takes me around 15 minutes of processing until I'm happy with the 'butter'.
