Lime Cheesecake
For the base:
1 cup dates
1 cup almonds
3/4 cup raisins
1/3 cup mixed seeds (I used pumpkin, sesame, sunflower - you could also add chia seeds in if you liked or other seeds).
Mix in food processor until starting to stick together. If too dry add more dates/raisins/tbsp tahini), and if too wet, more of the dry ingredients.
Press into ramekins or pie dishes.
The topping is simply:
1 cup cashews
1 medium avocado
1 banana
Juice of 5 limes (I used the juicer for ease and peeled the skin off and juiced the fruits whole)
Blend in a high powered blender.
Add the topping to the base and voilà - easy tasty cheesecake. I'm storing mine in the freezer until I'm ready to serve it (and maybe to stop me eating it all at once...)
