Oh. My. Word. I do this all the time. I make something and decide it's the best thing ever. Then I make something else and decide... anyway, you get the drift. This is pretty awesome.
I did save some for a lovely American friend and it lasted a couple of weeks. Sadly there was an incident involving a need for space in the freezer and a spoon...
Again, it's a really easy recipe - or actually two recipes as there's the jelly (jam) component too. Both are simple.
So the ice cream:
4 chopped, frozen bananas (chop before they go in the freezer)
1 tablespoon peanut butter
Blend together in vitamix or equivalent powerhouse of a blender (Magimix Le Blender are good too, as probably are many other brands) until smooth.
Top with jelly /jam. Recipe following. I decided to make into a sundae and highly recommend you try the same. I topped it and sprinkled some granola in the middle too. Divine.
Chia seed berry jam
300g frozen summer berries (or berries of your choice)
1/2 cup maple syrup
4 tsp chia seeds
Little bit of boiling water
Add the berries and some water (don't add loads just a bit at a time) to a pan and allow berries to defrost. Add in the syrup and stir. I like to get a potato masher at this point and squish them. Satisfying and useful. Squish away and leave on a low heat for 20 minutes or so. Add the chia seeds and stir, allowing them time to expand. Sieve to get rid of excess fluid and put the mixture into a jar once cooled.
I keep mine in the fridge - and can't answer how long it keeps for as it's never sat around too long to find out an end time on it - sorry!
