Simple, Tasty and Nutritious Romaine Wraps
Sharing one of my simplest, tasty dinners this afternoon. For me it provides enough of my (very) favourite way to eat - the buffet style of more-ish ness catering to my naturally food loving nature. The spring onions give it a little more kick (albeit a gentle one) and avocado provides a wonderful spread for the wrap.
You'll need (per person but you may like to share if you're not as greedy as me):
1 head of romaine lettuce
1 yellow pepper
2-3 spring onions
2 carrots/1 small sweet potato
4-5 cherry tomatoes
1/2 avocado
Grate the carrot/sweet potato (I use my food processor - see - greedy and lazy!) as it provides a finer end result but til I dug it out an everyday grater worked just great too. Chop the pepper, onions, tomatoes. Slice the avocado in half and take out the stone. Slice through the fruit so you'll easily get small pieces out.
Take one leaf of the lettuce and spread a small amount of avocado on it then scatter the vegetables along it. Roll up the leaf and enjoy! Repeat as required.
You can alter the veggies that you have in the wrap - you might want to grate beetroot, chop celery thinly, add sprouted seeds, thinly sliced cucumber batons. You may want to use tahini instead of the avocado, or almond butter or mixed nut butter. Play around with it. Swap the romaine for 'oh so sweet' lettuce, which is like a cross between romaine and iceberg. Or use baby gem. Ideally use organic - do the best you can with what's available and your budget.
