Ranch Dressing
OK so this is a good one.
1 peeled courgette, chopped
1/3 cup cashews
Juice of 1/2 a lemon
1 tbsp agave nectar
1-2 cloves of garlic, chopped (optional)
Blend together in high powered blender or food processor. You may need to push the ingredients down the sides of the container a couple of times to ensure everything is smoothly blended.
I tried to make this twice to take to our Triathlon club end of season ceilidh but twice failed and used it over a salad of spinach, cucumber and tomato. It was divine. First time I went with the garlic and second time I left it out. Both times it was fab (but the second time I knew I'd be dancing closely with our lovely Tri club members and didn't fancy the garlic fumes...)
