Moroccan Inspired Salad Dressing
Which I enjoyed served with a large salad and a tablespoon of hummus.
Make up a green/mixed salad of choice.
My choice tonight was an iceberg, 10 cherry tomatoes, 3/4 cucumber, 1/2 a large beetroot, some tinned corn and sultanas.
To make the dressing I used:
1 mango
1 orange
Small handful raisins
1tsp cumin
1tsp paprika
1tbsp garlic purée
1tbsp turmeric
2 spring onions
Blend it well together and pour over salad.
Top salad with hummus (lazily tonight I used shop bought but there's a recipe here for a delicious oil free hummus) and savour!
