My granola making (if I'm really honest), is a haphazard process, like much of my intuitive work in the kitchen.
I made two varieties recently that I'll share here, though I can't be totally accurate about quantities as it's more a shake of this and a sprinkle of that. I'll do my best. I don't think you can actually go wrong with granola - unless you burn it - don't leave it too long in the oven and you've got it cracked.
First I lightly grease the baking tray with coconut oil to prevent the sticky mixture sticking to the base.
Apple, seedy granola
2 finely chopped apples
3 cups oats
1/2 cup each pumpkin, sesame, sunflower seeds
1/2 cup desiccated coconut
1/2 cup maple syrup
Mix well and put into oven on low heat - 150-160C
Check after 10 minutes then again every 5 minutes or so, ensuring it doesn't burn. Mix each time.
Once toasted to your liking, then add in extra berries or sultanas and raisins - in mine for the retreat were sultanas. Cranberries and goji berries go nicely too.
Pineapple pecan granola
1/2 pineapple, chopped into thin pieces
3 cups barley
1/2 cup each pecans and brazils, chopped
1/2 cup maple syrup
Follow the method above then enjoy with plant based milk and chopped fruit.
Play around and add what suits you - I did used to add in sugar but it really doesn't need it - more than sweet enough already!
Chopped fruits, dehydrated fruit added at the end, berries, seeds, nuts. Use different sweeteners if you like - date syrup has a heavy, heady flavour whilst agave is lighter. My granola generally depends what's in the cupboard - and as long as you don't let it burn you really can't go wrong!
