Almond Butter and Date Toffee Stacks
Make your raw chocolate - I usually make it as follows:
Melt 100g cacao butter add in 4 tbsp cacao powder, 2 tbsp lucuma and 2-4 tbsp maple syrup (depending how sweet you want it)
Pour raw chocolate into mould and let set for a few minutes in the fridge.
The date toffee is 2 cups dates and 3/4 cup water, blended well.
Almond butter is almonds (roasted for 10 mins and made in processor until smooth and runny, add a pinch of salt whilst blending). If you'd rather you could use already made almond butter.
Layer on the dates and then the butter and top with chocolate. If you're not in as much of a rush as I was making these ones, move the middle layers away from the edges and the chocolate will drip down so encasing it all. Or can make as a stack like these - do what you like really - they're yummy whichever!
