Sweet and Sour Noodles
Sharing as we're excitedly off on a road trip and seeing some beautiful homeopaths along the way. Hoping to catch up with the beautiful Rowena from Evolve 2 Solve, the brilliant Emma from Emma Field Therapies and wonderful Naomi as well as some other lovely friends too. And I might suggest we might sample it somewhere...
So for this recipe to make it look really pretty you'll need a spiraliser but you could also use a grater which is what I did until I got my spiraliser for Christmas. And a blender - ideally a high powered one.
Serves two.
4 courgettes
2 carrot
Make both into noodles with spiraliser or grater.
Sauce
1 mango
1 red pepper
2 medjool date
Juice of 1 lime
Fresh coriander
1/3 cup of cashews
1/6 cup sesame seeds
5mm slice ginger
1/4-1/2 cup water as needed
Small piece jalepeno pepper
Blend ingredients until smooth.
Because I LOVE my veggies, I like to add extra veg and pour the sauce over the noodles and veggies (I'd add cherry tomatoes, corn, mushrooms, spring onions) but you could also enjoy the sauce simply with the noodles.
