Well. Sometimes things just go together. Fred and Ginger, Robson and Jerome (OK one is showing one's age now - loved them in Soldier, Soldier), butternut squash and sweet potato (wasn't long before it came back to food!). They just work. This is one of those. Although you may like to share it with another (it's quite filling) or have it as a treat for lunch or dinner.
I've started keeping a stock of frozen, chopped bananas in the freezer. It's easy to have a box on the go and when there's one left that might be going a bit too far, just chop it and over time add its fellow nanas to the box. 4 is the perfect number for me, albeit depending on the size. The vitamix blends it well if there's 4 or more, less can be a bit trickier.
So this is a simple, easy to create sundae. I love simple - easier the better.
You'll need:
4 frozen, chopped bananas
Almond butter (homemade is great and easy to do)
Cacao nibs
Coconut cream (optional)
The almonds are unroasted today which creates a different consistency, it's a little drier. Roasting them for 10 minutes at 180C, leaving to cool then processing them until smooth will get you almond butter of a runny variety. Your choice.
To my 4 chopped, frozen bananas I added a tablespoon of cacao and one of lucuma. Lucuma is one of those things I'd never heard of before my raw chocolate adventures and classed by some as a superfood*. I like it because it has a nice flavour, a little malty and reminds me when I smell it of the inside of a malteser.
Blend them until smooth in your food blender and then put into the bottom of a sundae glass/dish/container of your preference.
Add a heaped teaspoon of almond butter and top with cacao nibs.
I also added some coconut cream which was quite rich - I'd be tempted to leave it out next time - up to you.
Scoop on the remainder of the ice cream and top with another spoon of almond butter and cacao nibs.
Order some sunshine (or just pretend) and enjoy!

* I'm a bit of an old cynic and don't want to ruin anything but for me any superfood is one that's good for you. And the label is merely a clever marketing spin (mind, when I'm selling my own range of them I'll have to remember to delete this bit ;) ). So enjoy - super or simple. The simpler, less processed, the better. Grow your own then it's definitely super!
