Cashew Cheese-y Kale Salad
Another really simple one. I really really like simple meals. I guess with cooking two lots (preparing I suppose if I'm going to be correctly describing my kitchen activities), it just makes life a bit easier. And I'm all for that.
So tonight was tortilla bake with veggies for one and this little beauty for me.
I love fresh kale. Quite unbelievably I only discovered it last year - thanks to my adventures into raw food.
This salad is a bunch of kale - tender leaves picked off the stronger stalks and shredded. I like to shred them with my hands... I feel more connected to the food I'm going to eat - but if you prefer to chop than tear then chop away. Bite size/ mouth size pieces are great and cut down the need for two pieces of cutlery (can you see how lazy I am...)
The cheesy sauce is simply 1/2 cup of cashews, 2 tablespoons of nutritional yeast, a cup of water, 1 teaspoon of miso and a tablespoon of sesame seeds. Blended up and done.
Pour the sauce over kale, slice cherry tomatoes and pop them on top. That's it. It's not a huge meal on itself so you may want a jacket potato/sweet jacket potato or similar. One of my current favourites (on a little veer away from raw) is a dry roasted (pop it on greaseproof paper or non stick roasting tin) pumpkin atop a huge salad. Autumn eating at it's best.
