Raw Coconut and Sultana Brownies
Back to playing with our food. Once I started eating raw I realised I was playing with food much more and experimenting, enjoying creating and not worrying about 'getting it right'. Maybe everyone else does this anyway, but for me it was really liberating.
So I do love to pass on that at my food workshops - the ability to play and tread lightly makes a difference to me.
With this, when you've your date/nut (or seed) blend done you can add in extras of your choice.
Here I used:
1 & 1/2 cup dates
1 cup almonds whizzed up in the food processor.
Then 1 tbsp each of lucuma and cacao powder and processed again til mixed in.
I then added 1/4 cup each sultanas and cacao nibs and 1/2 cup desiccated coconut.
Feel free to substitute the almonds with cashews, brazil nuts, walnuts, hazelnuts and the like, or pumpkin or sunflower seeds.
Baobab powder would go nicely (it's got a sherbet-y flavour), and equally any dried fruit or nut mixes could add to the texture at the end. I'm having a wee love affair with coconut at the moment so that had to go in mine!
