Mango and apple tart
1 cup organic dried dates
3/4 cup almonds.
Process until fine crumbs in food processor. Press into small pie dish (there'll be some leftover for another/crumble topping/granola or other treat) and put into freezer to set.
The topping is:
1 mango
10 dates
1/2 apple.
Blend until smooth in blender. Put in fridge to thicken.
After half an hour to an hour, you can add the topping to the base and decorate with extra slices of apple. Put back into the freezer to set (bringing out before serving, about 30mins in advance).
