Pecan Date Bites
I saw this recipe doing the rounds but a larger version and with normal chocolate. So obviously I'd like a raw version. And I think these treats are so super satisfying that maybe small can be absolutely beautiful too. I've made them as presents for friends on our road trip but am a little worried maybe I should make some more before we set off just in case some should mysteriously 'disappear'.

Place one pecan in each of the halved dates.

For the raw chocolate:
50g cacao butter
2 tablespoons cacao powder
1 tablespoon lucuma powder
1 and 1/2 tablespoon maple syrup (or agave or other sweetener)
Melt the cacao over a bain marie (set the hob to lowest heat) and stir gently. You don't need to stir all the time although it can be quite therapeutic - and smells divine! Once dissolved fully, add the cacao, lucuma and sweetener and stir to mix fully.

Using a spoon, drizzle a small amount of the chocolate on each date half. Depending how generous you are with the chocolate may mean you have some left over or not. You can always do some more pecan dates or pour into a mould to set and make some plain chocolates (I added some finely chopped ginger and made 4 chocs for my dad). Pop into the fridge for half an hour and all done!
