Peanut Butter Banoffee Pots
Base is 1 cup roasted peanuts (10mins at 180° then allowed to cool)
1/3 cup sunflower seeds
3/4 cup dates
1/4 cup sultanas.
Mixed in food processor until fine crumbs then pressed into the base of a jar/ramekin (isn't that the best word?!).
Peanut butter layer is 1 cup peanuts, pinch of Himalayan salt blended until smooth in the food processor - you may need to stop the processor and scrape the peanuts down the walls occasionally.
Layer sliced bananas - easy.
Date toffee - 1 and 1/3 cup dates blended with 1/2 cup water.
Banoffee - 1/2-3/4 cup dates with 1 med-large banana.
Top with bananas and I sprinkled cinnamon on last.
I'm storing it in the freezer until we're ready to eat. Which may not be long...
